BAKING HACKS

1. **Room Temperature Ingredients**: Ensure that your butter is softened to room temperature before creaming it with the sugar. This makes it easier to achieve a smooth and fluffy texture.

2. **Chill the Dough**: Chilling the dough before rolling it out helps prevent it from sticking and makes it easier to handle. It also helps the cookies maintain their shape while baking.

3. **Use Parchment Paper**: Line your baking sheet with parchment paper to prevent the cookies from sticking and to make cleanup easier.

4. **Rolling Pin Guidelines**: Use rolling pin guides or rubber bands on the ends of your rolling pin to achieve an even thickness when rolling out the dough.

5. **Cookie Cutter Tip**: Dip your cookie cutter in flour before cutting out the dough to prevent sticking.

6. **Uniform Cookies**: For uniform cookies, use a cookie scoop to portion out the dough before rolling it into balls. This ensures that all the cookies are the same size and bake evenly.

7. **Cooling Rack**: Transfer the cookies to a cooling rack after removing them from the oven to prevent them from becoming soggy on the bottom as they cool.

8. **Jam Application**: To make it easier to spread the jam, warm it slightly in the microwave before using. This will make it more spreadable and easier to work with.

9. **Decorative Touch**: For a decorative touch, you can sprinkle powdered sugar on top of the assembled cookies or drizzle melted chocolate over them.

10. **Storage**: Store the assembled cookies in an airtight container at room temperature for up to a week. You can also freeze the unfilled cookies for longer storage, then thaw and fill them as needed.

These baking hacks should help streamline the process and ensure delicious results with your almond and red currant sandwich biscuits!
