INGREDIENTS  - 1 1/2 cups all-purpose flour - 1/2 cup confectioners' sugar - 1/4 cup ground almonds - 1/4 cup chopped dates - 1/4 cup unsalted butter, softened - 1/2 teaspoon baking powder - 1/2 teaspoon vanilla extract - Pinch of salt INSTRUCTIONS  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper. 2. In a medium bowl, whisk together flour, confectioners' sugar, ground almonds, baking powder, and salt. 3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla extract. 4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in chopped dates. 5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie. 6. Bake for 12-15 minutes or until lightly golden. 7. INGREDIENTS

- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

- 2 stalks lemongrass, tough outer layers removed, finely minced

- 3 cloves garlic, minced

- 1 tablespoon grated fresh ginger

- 2 tablespoons soy sauce

- 2 tablespoons fish sauce

- 1 tablespoon honey or brown sugar

- 1 tablespoon sesame oil

- 1 tablespoon lime juice

- 1/2 teaspoon ground black pepper

- Bamboo skewers, soaked in water for 30 minutes


INSTRUCTIONS 

1. In a mixing bowl, combine the minced lemongrass, garlic, grated ginger, soy sauce, fish sauce, honey or brown sugar, sesame oil, lime juice, and ground black pepper. Mix well to combine.

2. Add the chicken pieces to the marinade and toss until evenly coated. Cover the bowl with plastic wrap and marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours, to allow the flavors to develop.

3. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly grease it with cooking spray or oil.

4. Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece.

5. Place the skewers on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and slightly caramelized on the edges. You can also broil them for the last few minutes to achieve a charred finish, if desired.
